Ingredients:

  • 1 cup Turkish sun-dried apricots
  • 1 cup almonds
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: melted dark chocolate, shredded coconut, or chopped almonds

Instructions:

  1. Place the Turkish sun-dried apricots, almonds, and rolled oats in a food processor. Pulse until the mixture is finely chopped and starts to come together.

  2. In a separate small saucepan, gently heat the honey or maple syrup, almond butter, vanilla extract, and a pinch of salt. Stir until well combined and smooth.

  3. Pour the heated mixture into the food processor with the apricot and almond mixture. Pulse again until everything is thoroughly combined and forms a sticky dough.

  4. Line a square baking dish with parchment paper. Transfer the mixture to the dish and press it down firmly and evenly using your hands or the back of a spoon.

  5. If desired, you can add toppings such as melted dark chocolate, shredded coconut, or chopped almonds to the top of the mixture. Press them down gently to ensure they stick.

  6. Place the baking dish in the refrigerator for at least 1-2 hours to allow the mixture to firm up.

  7. Once chilled and firm, remove the mixture from the baking dish and cut it into bars or squares of your desired size.

  8. The Apricot and Almond Energy Bars are now ready to enjoy! Store them in an airtight container in the refrigerator for up to a week.
