
Apricot and Almond Energy Bars
Ingredients:
- 1 cup Turkish sun-dried apricots
- 1 cup almonds
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional toppings: melted dark chocolate, shredded coconut, or chopped almonds
Instructions:

Place the Turkish sun-dried apricots, almonds, and rolled oats in a food processor. Pulse until the mixture is finely chopped and starts to come together.

In a separate small saucepan, gently heat the honey or maple syrup, almond butter, vanilla extract, and a pinch of salt. Stir until well combined and smooth.
